Discover Splendido At The Chateau

Tucked inside the grand gates of Beaver Creek, Splendido At The Chateau at 17 Chateau Ln, Beaver Creek, CO 81620, United States feels less like a typical mountain restaurant and more like a private culinary retreat. The moment I walked through the doors, I understood why so many diners describe it as fine dining with a view. Floor-to-ceiling windows frame the Rocky Mountains, and in winter, the snow-covered slopes glow under the evening lights. It’s the kind of setting that quietly sets expectations high-and surprisingly, the kitchen exceeds them.

I first visited after a long day of skiing, expecting a cozy meal and perhaps a solid glass of wine. Instead, what I experienced was a carefully choreographed dining journey. The menu leans toward contemporary American cuisine, yet it draws inspiration from French techniques and seasonal Colorado ingredients. According to the Colorado Restaurant Association, farm-to-table sourcing has grown significantly across the state over the past decade, and Splendido clearly embraces that philosophy. The server explained how several ingredients were sourced from local farms and ranches, reinforcing a genuine commitment to freshness.

The evening started with a delicate appetizer of seared scallops. They were caramelized to perfection-a technique that requires precise heat control to achieve a golden crust without overcooking the center. As any culinary professional will tell you, scallops can become rubbery within seconds if mishandled. Here, they were tender and balanced with a light citrus beurre blanc. That level of precision reflects serious kitchen expertise. It reminded me of training sessions I once attended with a chef who emphasized that timing and temperature control are the backbone of high-end cuisine. Splendido’s kitchen clearly operates with that discipline.

The main course showcased Colorado lamb, cooked medium-rare and paired with seasonal vegetables. The presentation was refined but not overly fussy. Every element on the plate had purpose. Research from the National Restaurant Association highlights that modern diners increasingly value both sustainability and transparency in menu sourcing. Conversations with the staff confirmed that the restaurant rotates dishes based on seasonal availability, ensuring quality remains consistent throughout the year.

Wine enthusiasts will appreciate the carefully curated wine list. It includes both Old World and New World selections, and the sommelier offered thoughtful recommendations without pressure. In fact, during my second visit, I witnessed a neighboring table celebrating an anniversary. The staff tailored wine pairings for each course, turning dinner into an experience rather than just a meal. Reviews often mention this attentive yet unobtrusive service, and I can personally confirm it feels genuine rather than rehearsed.

Atmosphere plays a major role here. Live piano music drifts softly through the dining room in the evenings, enhancing what many guests call romantic mountain elegance. Lighting is warm, seating is comfortable, and the pacing of courses feels intentional. Nothing is rushed. That’s increasingly rare, especially in high-traffic resort locations.

From a professional standpoint, what stands out most is consistency. In hospitality, maintaining standards over time is the true test of excellence. Splendido has built a reputation in Beaver Creek for reliable quality. Travel platforms and dining guides frequently rank it among the top restaurants in the Vail Valley, and while ratings can fluctuate anywhere, the steady stream of positive reviews speaks volumes.

Of course, pricing reflects the upscale nature of the restaurant. It’s not an everyday casual stop, and reservations are strongly recommended, particularly during ski season. Still, for special occasions, business dinners, or simply a memorable night out in Beaver Creek, the experience justifies the investment.

Between the mountain views, thoughtful menu design, polished service, and carefully sourced ingredients, Splendido At The Chateau delivers a dining experience that feels both refined and personal. It’s the kind of place where details matter-from the first pour of wine to the final bite of dessert-and those details are exactly what keep guests returning year after year.

  • WOW…. 5 star experience dining and service!! Loved everything about this fabulous restaurant. From the minute my husband and I drove up to the valet the attendant wished me a happy birthday. And then walking in the hostess immediately greeted us and wished me a happy birthday as well. She sat us at a nice intimate table by the chef’s kitchen overlooking the gorgeous Mountain View’s. As we sat down and opened the menu the top of the menu was personally transcribed “Happy Birthday Izzy.” What an amazing touch as I have never seen such detail to making a customer feel so special! I ordered the sea bass and I could see the chefs start to prepare it in the kitchen right away. It came out rather quickly and it was one of the most amazing meals I have ever had in my life! We also ordered both soufflés, the chocolate and lemon. And this is a must! The lemon was my favorite as they both came out piping hot and made the meal! This place made me feel so special on my birthday!

  • Splendido delivered one of the top five fine dining experiences my family has ever enjoyed—an unforgettable symphony of flavors, service, and hospitality that left us in awe. From the first bite, the food exploded with dynamic, innovative tastes that had us eagerly anticipating each course. Standouts included the succulent pork chop, the richly marbled dry-aged cowboy ribeye, the delicate Dover sole, and the perfectly rendered duck—though honestly, every dish felt like a masterpiece, impossible to fault. But what elevated this evening beyond the exceptional cuisine was the palpable pride and precision in every aspect of service. Check out the video I uploaded to see it firsthand: we were introduced by name to the head chef and the talented team crafting our meal right before our eyes. After dinner, the general manager personally checked in, his warmth and genuine care ensuring our night was nothing short of perfect. Our server, Anna, was the heart of it all—warm, engaging, and incredibly knowledgeable, turning a meal into a cherished memory. Seated right beside the open kitchen, we spent over two hours mesmerized by a team of poised, confident professionals executing exquisite cuisine with unwavering pride. As business owners ourselves, my wife and I found this behind-the-scenes mastery just as inspiring as the impeccable food. The finale? Divine apple dessert and ethereal soufflés that melted in our mouths, plus a highlight for my son: crafting cotton candy alongside the pastry chef. The photos capture the magic, but words fall short—Splendido is a 10/10 triumph. We can’t recommend it highly enough. Thank you for an extraordinary evening!

  • Here's a 5-star review based on your input: --- We recently had the pleasure of dining at Spendido at the Chateau in Beaver Creek, and it was hands down the most amazing dinner we’ve ever enjoyed. From start to finish, every little detail of every dish was pure perfection—flavors that danced on the palate, presentation that was almost too beautiful to eat, and a level of creativity that left us in awe. This isn’t just fine dining; it’s an experience that elevates the senses. The manager, Matt, was an absolute gem—friendly, welcoming, and incredibly knowledgeable. He made us feel right at home while sharing insights that deepened our appreciation for the meal. Our server, Jared, was equally fantastic, attentive without being intrusive, and genuinely passionate about ensuring we had the best evening possible. The entire staff worked together seamlessly to create a top-notch experience that we’ll be talking about for years. Spendido stands out as the best Michelin-starred restaurant we’ve ever dined at, and that’s saying something. If you’re looking for a night of culinary brilliance and impeccable service, this is the place. Five stars don’t even feel like enough— bravo!

  • Incredible and hard to beat restaurant. Highly recommend the Berkshire pork chop and truffle risotto. Extensive wine list with a hefty price tag but worth it. The ambiance here is 11/10. It feels as though you’re dining in a castle. Top notch experience all around.

  • I want to thank the chefs, servers, and hosts at Splendido for the lovely birthday dinner. For my first course, my steak tartare was delicious and paired well with the potato baked pavé. I also tasted my family's appetizers, which were also amazing. The foie gras was especially excellent. For my main course, my rack of lamb was perfectly fatty and a was a satisfactorily hearty size. I only wish we were made aware of the time sensitive soufflé desserts before the end of dinner, as that sounded delicious. The restaurant is beautiful, with even more beautiful views. The dining room was quiet and felt intimate even with other diners next to us at the other tables. As the evening progressed, it did seem that the servers were a bit stretched thin. Nevertheless, our server Jared was professional and described all the food with vivid details. Again, thank you to the chefs and waitstaff for the excellent meal.

  • Very elegant, cozy and romantic place that serve by far be best food in Beaver Creek. Amazing flavors and creative dishes. Outstanding service. I’ve never tasted a rack of lamb so tender and mouthwatering. Applause to the chef!

  • We had an exceptional dining experience tonight. From the moment we arrived, we were warmly welcomed by the valet who promptly took care of our car. Our server was gracious and attentive, recommending the Colorado lamb rack and the dry-aged steak—both of which were cooked to perfection and bursting with flavor. Even our two-year-old couldn’t get enough of the meats! After dinner, we stepped into the front lobby to find our car waiting for us—what a seamless and thoughtful touch. While this restaurant is currently featured in the Michelin Guide, we truly believe our experience rivaled, if not exceeded, that of a Michelin-starred establishment. We were too full to try dessert this time, but we’re already looking forward to coming back for more!

  • Amazing experience! Our server, Jared, was so helpful, friendly and frequently checked it to see how our dinner was going. One of the better servers I’ve had in a long time, he made our experience so great. Highly recommend the lamp, pork belly, raw beef and kampachi (pictured above). The lobster bisque and cavatelli were good but nothing amazing.
